Indian Vegetarian Cooking - Night 2



Spinach and Dal
1 cup of yellow lentil (Moong dal)
4 cups of water
1 cup of spinach washed & chopped
1 small onion chopped
1 small tomato chopped
2 green chilis chopped
3 cloves of garlic minced
3 tbsp of oil
1/2 tsp cumin seed
1/2 tsp of turmeric
1/2 tsp of chili powder
1/2 tsp of salt
2 tbsp of lemon j

  1. Wash lentil in several changes of water
  2. Put lentil in the pot
  3. Add water, salt, and turmeric
  4. Cook on high heat until it starts to boil, then cook on medium heat for 20 minutes
  5. Add spinach, and cook for another 5 minutes
  6. Heat oil in the pan, add cumin seed, cook for less than 1 minute
  7. Add onion, garlic until golden brown
  8. Add chili powder and tomato and cook until soft
  9. Add masala to the cooked lentil, add lemon juice
  10. Add fresh coriander and chilis
Green Beans and Potato
1 pound of green beans washed and cut into small pieces
4 large potatoes peeled and diced
4 tbsp of oil
1/2 tsp cumin seed
1/2 tsp chili powder
1 tsp salt
1/2 tso of garam masala
1/2 tsp turmeric powder
handful of fresh coriander chopped



  1. Heat oil in a pan
  2. Add cumin seed, cook for less than 1 minute
  3. Add potatoes and cook for two minutes
  4. Add salt, turmeric and chili powder
  5. Add beans and cook on medium heat for 20 minutes
  6. Add garam masala and fresh coriander
  7. Serve it hot
Rice and Tomato
1 cup of basmati rice
2 cups of water
4 tbsp of oil
2 tsp of mustard seeds
1 tsp salt
1/4 tsp chili powder
2 onions chopped
1 small tomato chopped

  1. Pick through rice and wash in several changes of water, soak for 15 minutes
  2. Heat oil in a pot with the lid
  3. Add mustard seeds, cook for 1 minute
  4. Add onions, cook for 5 minutes
  5. Add salt and chili powder
  6. Add tomato, cook for 5 minutes
  7. Add rice, cook for 2 minutes
  8. Add water, cook on high, allow it to come to a boil before putting the lid on
  9. Cook at low heat for 10-15 minutes or until rice is cooked
Kachumber salad
1/2 cup radish diced
1 large tomato
1 small red onion diced
1 large carrot diced
1 small green chili diced
1 tbsp lemon or lime juice
1 tbsp fresh coriander chopped
salt and black pepper to taste

  1. Mix all the vegetables
  2. Add lemon or lime juice
  3. Add salt and pepper
  4. Toss well
  5. Add coriander
  6. Enjoy!
